Veggie Soup


  • 3 tbsp Organika veggie broth
  • 7-8 cups of water
  • 3 carrots, peeled and chopped
  • 2 stalks of celery, chopped
  • 1 onion, diced,
  • 3-5 cloves of garlic, chopped
  • 1 block of tofu (roughly 350g size), cubed
  • 1-1.5 cups of Spinach
  • Salt and pepper to taste
  • Oil (to sauté, I use avocado)


  • Combine the broth, water, carrots and celery in a pot and bring it to a boil
  • While the broth mix is boiling, add some oil to a pan and allow it to heat up. Add the onion, salt and pepper and sauté until onions are translucent
  • Add in the garlic and sauté for a few more minutes and remove from heat
  • Add the onion and garlic mixture to the broth and stir, reduce the heat to medium
  • Add the tofu cubes and allow the soup to cook for about 7 more minutes and remove from heat
  • Once the soup has been removed from heat, add in the spinach and stir
  • Pour yourself a bowl and enjoy!
